The harvest and the olive warehouse
The finest olives are collected straight from the olive grove and carefully transported to the olive warehouse, where they are processed within 24-48 hours, to guarantee freshness and quality. Beforehand, each batch of olives is subjected to a further check, to ensure the highest quality standards.
1. Start of the process
From the warehouse, the olives are transferred to the mill, where the process to turn them into extra virgin olive oil begins, carefully following a method that preserves their quality and genuine flavor.
2. Washing
The olives are washed thoroughly with water to remove all impurities and traces of earth or dust. This essential step guarantees a hygienic process and preserves the quality of the oil.
3. Milling
The olives are crushed with large millstones, which turn them into a smooth paste. This traditional method, combined with the use of a mechanical press, makes it possible to obtain a paste with the ideal consistency, ready for the subsequent oil extraction stages.
4. Malaxing
The paste obtained from the milling process is gently mixed, stirring constantly. This process, known as malaxing, aids the natural separation of the drops of oil, in preparation for extraction
5. Decanting
The olive paste is transferred into the decanter, which gently and effectively separates the oil from the solid residue. This step makes it possible to obtain a pure oil, preserving all its organoleptic properties.
6. Centrifugation
The oil passes through a centrifuge that separates it from the remaining vegetation water. This process guarantees a pure extra virgin olive oil, ready to be analyzed and stored in the best possible conditions.
7. Storage
As soon as it is extracted, the oil is weighed and undergoes strict quality analyses. It is then stored in stainless steel tanks at a constant temperature, in an environment ideal for preserving its freshness, flavor and nutritional properties prior to bottling.
