Varieties and flavor

Varieties are also distinguished by color. Thunnus alalunga, with its white flesh and pinkish nuances, is known as white tuna, while the albacares variety, the most common in the major food industry, is known as yellowfin.

Peculiar features and aromas

Whole, compact filets preserved in clear oil, so the quality is instantly visible.

APPEARANCE AND COLOR

Even, uniform pinkish-white color, indicating not only top quality, but that the fish is cooked perfectly evenly, inside and out.

CONSISTENCY

Compact, whole steaks, evenly sized and tender.

TASTE AND FLAVOR

Clean, delicate, rounded flavor, with just the right amount of salt, enhanced with a superb olive oil that subtly preserves the taste, making it a favorite with children.

AROMA

Very delicate, without the strong fish smelly when the jar is opened, characteristic of other brands of tuna.

The secret? Processing at the fishing site

When the fish reaches the canning factory from the port, we start the initial cleaning by hand, and cutting to separate off the belly. The flesh is then cooked gently to preserve its nutritional properties, and then cut into steaks and filets. The filets are then arranged individually by hand in the jars, taking care to keep them intact. The olive oil is not added until the end, to preserve the tun a without covering the taste.
