Mombaruzzo Specialty According to historical tales, the Pastry Chef of the Savoia Royal Court prepared the first Amaretto at the end of the 18th century. This cookie was immediately appreciated for its sweet taste and for the softness. The recipe was a secret and the few pastry chefs who had the privilege to know it, passed it on from father to son. Nowadays Fratelli Carli Soft Amaretti cookies are prepared by hand in compliance with the original recipe and baked to obtain a soft core wrapped in a thin golden crust, thus revealing the skills of a professional Pastry Chef.

A treat from the House of Savoy

Each Italian region has its own idea of the amaretti cookie: some like it small and crisp, others extremely soft and bursting with almonds. The soft amaretti date back to the end of the 18th century, probably to the House of Savoy, and originated in Mombaruzzo, a small town in the Monferrato area of Piemonte. Characterized by the apricot kernels and the pleasantly soft texture, they proved an immediate success, becoming a popular pastry whose recipe was closely guarded and handed down through the generations.
