Eggs in Purgatory
A quick, tasty dish, perfect for an energy-packed breakfast, a quick lunch or a satisfying evening meal.

Method

Pour the Fratelli Carli Arrabbiata Tomato Sauce into a pan and heat over a medium heat for about 5 minutes, until it starts to boil lightly.

Use a spoon to make four hollows in the warm sauce to make space for the eggs. Break the eggs gently into the four hollows in the sauce, taking care to keep the yolk whole.

Cover the pan with a lid and let the eggs cook in the sauce for about 5/6 minutes, so that the white is cooked through but the yolk remains soft.

When the eggs are ready, add salt and pepper to taste. Complete with a generous amount of Extra Virgin Olive Oil Fruttato and add a few fresh parsley leaves for a fresh touch of color.
