For the baskets Roll out the filo pastry and cut out 4 rounds. Place them in ramekin dishes coated with our Pure Olive Oil. Fill the baskets with dried beans and bake in the oven at 200°C until golden brown. Once ready, leave them to cool.
For the Russian salad Wash the potatoes and carrots, peel and cut them into cubes. Boil all the vegetables separately in boiling salted water (7-10 minutes); when ready, drain them and leave them to cool. Cut the gherkins into cubes. When the vegetables are warm, place them in a bowl and add the gherkins. Season with a little of our Delicato Extra Virgin Olive Oil, wine vinegar, salt and pepper. When everything is cold, add our Mayonnaise with Olive Oil. Place the Russian salad in the fridge for at least an hour and serve in the filo pastry baskets. Garnish with chives to taste.
