Grilled lobster

METHOD

Split the lobsters lengthwise. Remove the innards and the sand bag in the head.

Place the lobsters on the grill, on the carapace side, fairly far away from the charcoal, so that the lobsters receive the heat without burning. Leave the lobsters for twenty minutes until the flesh bubbles or foams, and then cook until perfectly done.

Enjoy the lobsters with Extra Virgin Olive Oil Delicato, add salt and pepper (but not lemon or sauces, since these would alter the lobster’s marvellous fragrance!).
