Muffins with dried tomatoes
The secret ingredient of this flavorsome muffin, is dried tomatoes
METHOD
In a bowl, beat the eggs, adding milk, Extra Virgin Olive Oil Delicato, the herbs and the shallot, finely chopped together beforehand.
In another container, mix the flour and baking powder, the cheese, and salt and pepper. Blend slowly, mixing with the egg and milk mix, delicately from the bottom upward.
Lastly, add the Dried Tomatoes roughly cut into large pieces. Dip them in flour before adding them to the dough.
Grease the moulds. Half fill the moulds and place them in a dish in the oven at about 200° for 25 minutes. Serve at room temperature.
