Tuna and whitebait ravioli
Tuna Fish in Olive Oil is perfect even as stuffing!

METHOD

Knead the pasta ingredients. Spread the pasta out. Homogenize the Tuna Fish in Olive Oil in a mixer. Add salt and pepper and Pure Olive Oil. Stuff the ravioli pieces and close them.

Glaze the sliced onion in Pure Olive Oil. Add the whitebait, douse with wine and leave to dry off. Add very finely diced tomatoes and shredded basil. Salt and pepper to taste.

After blanching in salted boiling water, sauté the ravioli in the sauce.
