Preparing the tomatoes stuffed with Russian salad flavored with lime

First of all, cook the vegetables and the egg. Wash, clean and cut the carrot and the potato into cubes (of the same size as the peas). Place a steaming basket in a pan, and add the peas as soon as the water starts to boil. After 5 minutes, add the carrots, and after another 5 minutes, add the potatoes. Cook for a further 10 minutes, remove from the heat and place the vegetables in a bowl. Season with a pinch of salt and drizzle with our Extra Virgin Olive Oil and the juice of half the lime. Leave to cool.

While the vegetables are cooking, hard-boil the egg in a pan with water (cook for 9 minutes from the moment the water starts to boil). Remove from the water, peel off the shell and leave to cool.

When the vegetables and the egg have cooled, chop the hard-boiled egg into cubes and add it to the vegetables. Season with our Mayonaise with Olive Oil and the rind of the lime. The stuffing for the tomatoes is now ready.

Wash and dry the tomatoes. Use a knife to remove the top of the tomatoes, and use a spoon to scoop out the inside with the seeds and pulp. Salt the tomatoes and stuff them with the Russian salad. To complete the recipe, place the tops back on the tomatoes and top with a thin slice of lime. Serve the stuffed tomatoes cold.
