How to prepare butter-free béchamel? Start by heating the milk in a saucepan on a low flame; leave to cool.
Place the oil and the flour in another saucepan and heat on a low flame, stirring frequently, for a couple of minutes. This step is necessary in order to prepare the roux, which is the base for your butter-free béchamel.
When bubbles start to appear and your roux gently swells up, remove it from the heat and add half of the cooled warm milk. Stir with a whisk to prevent lumps from forming. Now add the remaining milk and heat some more.
Season with a pinch of salt and a generous grating of nutmeg. Cook on a medium flame, stirring with a whisk all the while, until the béchamel with our Extra Virgin Olive Oil starts to boil and thicken.
Remove from the heat and use the homemade butter-free béchamel in whatever preparations you prefer: from lasagna to oven baked stuffed pasta.
