To prepare the tuna mousse, put the ricotta, the rinsed and desalted capers, the chopped White Tuna Filets in Olive Oil, the grated zest of half a lemon and a tablespoon of water (to help make the tuna and ricotta mousse more fluid) in a blender.
Blend until smooth and frothy, taste, adjust the seasoning and transfer the light tuna mousse to a bowl.
If you wish to serve the tuna mousse on slices of bread, decorate each slice with a caper.
